  • A 145-year-old dairy is back in family hands as James Winder, a sixth-generation descendant, plans to boost online orders and bring back home delivery via Instacart while launching new products like seasonal eggnog. The owner said the company will expand its reach to more local stores — a move to recapture loyal customers over the next year.  The Salt Lake Tribune

EDUCATION NEWS

  • A new report by the Kem C. Gardner Policy Institute shows that by 2031 more than 70% of Utah jobs will require postsecondary education. The report links higher education to better earnings and urges boosting skills—emphasizing the need to align credentials with future workforce demands.  KUTV
  • Utah public school enrollment fell by 11,478 students this fall, marking the largest decline in 25 years with 656,311 students compared to last year's 667,789. The drop is expected to reduce state funding and lead to school closures and staff layoffs as districts adjust to lower numbers.  The Salt Lake Tribune
